    My toxic trait is that I believe bananas should never be in a fruit salad. The texture and flavor is so different from everything else and it gets slimy after tossing it in the bowl a few times! Berry or citrus salads all the way.

    Just an observation on Dorrie Greenspan's recipe: My Changes. 1) Raisins are soaked in rum; rum is added to the cake 2) All additions (coconut, carrots, pineapple, & pecans) are lightly coated in flour so they suspend and not sink. 3) Cinnamon, all=spice, and nutmeg. 4) Always add lemon zest to the cream cheese frosting (and frost the entire cake!!) 5) Always make the cake one day in advance, wrap, chill, and then frost the next day.

    Great video. I add cinnamon, nutmeg and ground ginget always and less sugar. I am into the pineapple, sometimes the tidbits ( cut in half size) if I can't get crushed. For my frosting more butter less icing sugar , cream butter and cc then add icing sugar til I get right texture for spreading , always a spladh of vanilla. :))

    I already had sourdough proofing in the refrigerator but watched the video for a refresher on shaping. So much good stuff especially the peel to transfer from couche to parchment. I use hot water onto hot lava rocks for steam. Claire’s video helped to smooth out all the rough edges.
